Healthy veggie waffles with wholemeal spelt flour

Veggie waffles are a quick and healthy lunch for the whole family. The popular waffles are quick to prepare and always a hit!

Ingredients

330 g wholemeal spelt flour
400 g grated vegetables of your choice,
e.g. carrots or courgette
30 ml oil
3 eggs
90 g finely grated cheese
240 g flour
60 ml sparkling water
Onions, fresh turmeric, garlic or basil as desired

Method

  • Step 1

    Mix all of the ingredients using a food processor and whisk using a stick blender (to make the waffles nice and fluffy).
  • Step 2

    Grease the waffle iron (preferably with peanut oil) and fry the waffles on the second-highest setting.

We make this recipe almost every week at home. We have two young children and like many parents, we’re keen to encourage healthy eating. Our children are rather picky eaters, but they really love eating the veggie waffles. We always freshly mill the flour for the waffles so the many vitamins in the spelt are preserved. I come from the district of Ludwigsburg in the Strohgäu region. We get the spelt from a local mill.
