Traditional vanilla crescent biscuits

Vanilla crescent biscuits are a traditional Christmas and afternoon tea bake, so they're a firm fixture on any plate!

Ingredients

Makes approx. 80 biscuits
600 g wheat flour (extra-fine flour) 405
210 g ground hazelnuts
150 g icing sugar
450 g margarine
Icing sugar
Bourbon vanilla sugar

Method

  • Step 1

    Use your hands (not a food processor) to quickly work the ingredients into a consistent dough.
  • Step 2

    Make several long finger-width rolls out of the dough (try not to use any flour to roll it out as this will dry out the dough and might cause the biscuits to break).
    If the dough is too soft, leave in the fridge for a short time.
  • Step 3

    For each biscuit, cut off a thumb-length piece from the prepared rolls and form it into a classic crescent shape.
  • Step 4

    Place the crescents onto a baking tray with some baking parchment and bake in a pre-heated oven at 180°C (fan) for 10 minutes. Mix together the icing sugar and bourbon vanilla sugar in a small bowl.
  • Step 5

    Take the crescents out of the oven and turn them over in the sugar mixture while they’re still warm. Then leave the biscuits to cool on a rack or something similar.
